This month’s recipe feature pairs nicely with our weekly wellness tip or meal prepping. This chia seed pudding is the perfect easy meal prep for nutritious and satisfying breakfasts for the week ahead! It has been an absolute staple for me as of late. As a college student who juggles school, work, and various other extracurriculars, having nutritious meals on hand is a must! It allows me to fuel my body right, while taking away the extra time and energy (that many of us don’t have) having to be spent towards thinking about and/or making breakfast every morning.
Ingredients:
- Chia Seeds (2-4 Tbsp)
- Milk of Choice (~ 1 Cup)
- Dash of Cinnamon
- Sweetener of Choice: I usually use a touch of honey or maple syrup
- * Optional: Greek Yogurt
- Additional Topping Ideas: (add the following morning, after letting the chia and milk sit overnight, or at least for a few hours!)
- Fruit of Choice
- Bananas work really well! (pictured above)
- Nuts/Seeds of Choice

Putting it Together
The exact amounts of milk and chia seeds can be adjusted, depending on your desired level of thickness!
- General Rule is 3 Tbsp. Chia: 1 Cup Milk
- 4 Tbsp Chia = Thicker
- 2 Tbsp Chia = Thinner
- The choice is yours!
- If you wish, you can also add in some Greek yogurt for a little more thickness as well!
The Transformation
- Chia + Milk Absorption Thickening Magic
- What makes chia pudding so cool is that, over time, the chia seeds absorb the milk, yielding a nice thick texture when it’s time to eat!
- For the best results, prep the pudding at least one night prior to using. The magic will start to happen after a few hours, but giving it overnight will yield the best consistency!

Key Nutritional Highlights
- High in Protein and Fiber: Keeping you full and satisfied
- but also not incredibly heavy, which prevents feeling sluggish
- Rich in Calcium, helping to keep bones strong
- Gives various other vitamins and minerals, depending on the toppings you use
Wrapping Up
Many of us don’t have time to cook a nice breakfast in the morning. Rather than resorting to a drive-thru stop, or sticking with just a coffee, give this a try for your next work week!
As always, feel free to reach out with any questions, comments, or how it goes for you. If you have a favorite topping combination, feel free to share that too!
I’m always willing to discuss any of these ideas in more detail! Go out their, win the day, become a better you, and reaise the rouf on your health!
