Let me show you one of the many recipes that changed how I think about healthy eating: eating healthy doesn’t have to and shouldn’t be restrictive!

it’s not about what you take away — it’s about what you get to discover. And what I discovered is that you can have a tall, fluffy, deeply satisfying stack of pancakes on a Sunday morning and still be completely on track with your health goals. These coconut flour pancakes are my proof.

These pancakes are light, fluffy, and full of warm cinnamon flavor with natural sweetness from ripe bananas!

  • 2 ripe bananas
  • 4 eggs
  • 2 heaping tablespoons coconut flour
  • 1 teaspoon cinnamon
  • Splash of vanilla extract
  • 1 heaping spoonful of greek yogurt

Optional toppings:

  • Fresh berries
  • Greek Yogurt
  • Sweetener of Choice
  • Nuts / Nut butter
  • Coconut flakes
    • My personal favorite would have to be some fresh blueberries or strawberries with almond butter, but there is no wrong combination!

Step 1: Mash the bananas

  • In a mixing bowl, mash the ripe banana until smooth.

Step 2: Combine in the rest of the ingredients

  • Whisk in the eggs, then mix in the coconut flour, cinnamon, and vanilla, until fully combined. Let the batter sit for 1–2 minutes. Coconut flour takes a little bit to do it’s thing, and these couple minutes allow it to fully absorb!

Step 3: Cook the Pancakes

  • Heat a non-stick skillet over medium-low heat. Lightly grease the pan if needed.
  • Pour small portions of batter (1/3 – 1/2 cup each) onto the pan/skillet and cook for about 2 minutes per side, or until golden brown and cooked through.

Step 4: Stack, Serve, and Enjoy

  • Add your favorite toppings and enjoy a stack of warm, nutrient dense pancakes!

Bananas: provide natural sweetness, potassium, and energy-boosting carbohydrates.

Eggs: packed with protein and healthy fats that help keep you full longer.

Coconut Flour: high in fiber and naturally gluten-free, making it a great alternative to traditional flour.

Greek Yogurt : adds additional protein and calcium.

  • Calories: 550-600 Calories
  • Protein: 32g
  • Fat: 22g
  • Carbs: 65g
  • Fiber: 13g
  • Use ripe bananas for better sweetness and texture
  • Cook on medium-low heat to prevent burning
  • Keep pancakes on the smaller side for easier flipping
  • Let the batter rest for a couple minutes prior to cooking to allow the coconut flour to absorb the moisture
